Here is a easy one anyone can make;
Take six small potatoes dice them put to fry in skillet
add to that two bell peppers and one white onion diced
add to that skillet your favorite summer sauage. Serve
with tossed salad and favorite dressing with homemade
bread and tall glass of ice tea or favorite brew.
Sounds pretty good and can easily be made in a truck!:thumbsup:
 
the op might want to try a 12 volt lunch box oven to cook things in. or if the thruck has an apu and a good inverter then they might invest in a nu wave oven

The best money I ever spent was on a (3) lunch box ovens. I have a microwave and a 2,500 Watt inverter.
Thus far I have never used the microwave.

I never used a lunchbox oven :rolleyes: though I hear there slow but it workso_O. I had a microwave but I never used it. I can tell the food don't stay hot for long after it's nuked and the food tastes funny since its not natural to heat food from the inside out..

I have heard they are slow too. I dunno, It takes a half hour to an hour, depending on if you are just heating food or actually cooking it.
Growing up and at home now. I got to wait about that amount of time to get my dinner cooked.
Simple planning eliminates the wait. Put your food in at your last stop and plug it in an hour before you plan on stopping for the night. Unplug it. I will keep food hot for hours if you keep it closed.
 
When I travel which is not often I sure do not give my money to Mr MCDONALDS or any other fast talking drive thru dressed up menu of goods. Your right Diet is a choice. That fast stuff is hard to digest too and can get old real quick to eat as well as expensive I agree. So with that said here is what I do I prepack items to snack on while I rolling down the hwy as you cannot get where you need to go stopping every few miles. So now I tell you what I do I pack two lg thro of coffee, take a roll along cooler and inside of that I pack ice in tupperware bin giving me ice to cool my goods and cool clean water to drink and around that I pack fresh fruit and canned fruit,Individual serving of pudding. A jar of peanut butter,chicken spread,tuna spread,spam,potted meat,for quick sandwich, In a large tote bag I pack the dry goods bread, chips,candy,cookies. Along with can opener and small portable kitchen wear. Including a good flash light. LOL I even been told I am like a rolling groc store I even carry my own toilet paper too. Now in this day and age and with the different ways people think and act someone like me makes sure her eggs are all in the right basket when it comes to traveling by myself.
 
Remember one time had to make a business trip with a associate. Anyway He wanted to do the driving so threw him the keys to my wagon to drive. We got caught in a large city in a traffic jam one of those crawl along jobs. So while we waited for everyone else to get there act together so to speak I proceeded to build us a dinner out of the cooler and tote bag. Had dinner in the slow moving traffic jam.

Excellent!:thumbsup:. I have more food in the truck than I do at home. I also eat better on the road than at home. When I get home I am lazy (or tired) I just order pizza. I hate that because I love to cook.

Eating on the road is only limited by ones imagination or creativity.
 
Here is a couple of other ideas for you fellows....Just suggesting is all. Take three rolls of toilet paper store in bread wrapper for the road. Keeps it dry and clean to use. I use Electric dishwasher packets to wash my clothes in and they come out sparking clean I worked for years and had to keep my uniforms sparkle clean. Bounce fabric soften sheets keep them after they are used in a dryer....I put them around my car mats for fresheners in the car double duty with only one time expense. Your on the road working quess what all sudden come the big D most probably from eating something the systems rejects. Get a package of pig skins that will help the situation as the skins absorb the bad juice in the tummy of any man no matter how big he grown. Happy, safe traveling to all of you today.

No measure just mix easy to make all in one bowl
One large can drained juice from mackerel
One package of crumbled crackers
Two eggs
Dash of flour
Dash Salt or Garlic Salt
One chopped white onion
Chopped green chili
Mix all together spoon up and make a patty
Stick on hot grill until golden brown
Finger food!!

Happy eating!!!
 
On container of Carmel Dip
1 or 2 large Apples
Wash, remove core
Slice thin slices and dip into Carmel Dip

Dunno the answer but I know bugs won't eat smoked meat either.
I remember my mom talking about 'salt pork', preserved by layering the meat in a crock between linen and salting each layer.

Doesn't sound real healthy but I suppose it was a lot healthier than going without meat all winter.

half pound of hamburger meat fried add one can of mushroom soup and tad of water. Becomes a gravy serve spread on toast or biscuits and mashed potatoes with tossed salad.
Not bad eating for a thirty minute prepare time.
 
Pea Salad
One can of sweet peas drain juice off and put peas in a bowl.
Add one half chopped up white onion
Add three hard boiled eggs
Add salt and pepper
Add mayo spoon full stir all together
Cool before dinner then serve pea salad.
