Terry has good taste in food, loves dogs, and his country (even if it is only Texas). Cant beat that even with a Robert Redford smile, lol.

I watched a Robert Redford movie today, I know, but it was all that was on. Charming smile aside, he is a leftwing nut case.
 
Ok, I made the lasagna Wednesday.

The recipe should probably state more than 2 zucchini. I used 2 large and 1 small and it was not nearly enough. I used a smaller baking pan to compensate for not enough zucchini, which may be why it was to saucy. But on the other hantead of using 2 cans of tomatoes, I only used 1 jar of Emerils tomato basil pasta sauce, and I did not run the sauce, onions, peppers, and other sauce ingredients through the blender. I like the diced veggies rather than a smooth sauce. I also forgot to get Parmesan cheese at the grocery store, so it was only topped with mozzarella.

I didn't have anyone to share it with, so I ended up throwing most of it out. It was just an experiment anyway.

Perhaps the recipe would have turned out differently had I followed the instructions exactly, and maybe next time I will.

The worst ingredient that someone can put into lasagna is spinach. Spinach is great raw, mixed with a salad, chopped into a dip, etc., but never in a lasagna. :nono: I had to ask a relative to tone it down or nix the spinach completely in lasagna. Blegh!

I love Spinach in my Lasagna, mixed in with the ricotta, it is a good change.

That contrast of soggy green vegetable against the red color of the sauce is just too much....and I haven't even gotten into the horrors of leftovers yet....

Nuh uh, not for me. You and my relatives can keep that dish! :duckhunt:
 
Here is a recipe for macaroni & cheese that doesn't contain any cheese whatsoever. Years ago, when I experimented with a vegan diet, I tried this one, but I substituted coconut oil for the margarine. It wasn't near as good as the real thing, but then nothing ever is. It is a good substitute, however, if you are jonesing for mac and cheese and for some reason or another can't have the real thing. You can also use the nutritional yeast flakes in a white sauce (made with soy milk) for many other cheese dishes.

I tried that Zucchini recipe again. This time I used paper towels to dry the moisture from the zucchini after slicing, and I cut thicker slices. I took Midwestbound's suggestion to use an egg wash and coat with bread crumbs (?), but instead I used a flax seed substitute for the egg, and wheat germ for the bread crumbs.

Also, in my first attempt, I used Emeril's sgetti sauce and added more bell peppers, basil, and onion, but this time I used Muir Glen sauce with the extras. It was fantastic!

Wasn't much left after I fed my hungry driver who was only home for a a day and a half.

I made the pizza on whole wheat tortillas recipe (The one I posted earlier), and they were very tasty, nutritious, quick and easy. Although I am not a huge fan of spinach, the mushrooms and onions made up for it. I was also worried the tortilla would be hard and crispy, but it was surprisingly pliable, and could even be folded like a soft taco. I will definitely be doing this one again. I plan to experiment by using a little tomato and basil next time.
