When I was little, my grandma managed to convince me that the "Popeye" brand of canned spinach would make me big and strong. So I learned to like it and when I was at the grocery store with my mom, when other kids would be begging for candy and junk food, I'd be asking my mom to get spinach. She got some strange looks from other women in the store.

Your Grandma must be one special lady because most adults cannot teach that to a kid no matter how hard they try, lol. Either that, or you was just a strange kid :) :hide:
 
Green Beans with New Potatoes (A good way to use up those garden fresh beans)


Ingredients

3 to 4 slices of bacon
1/4 of a small onion, coarsely chopped
3 to 4 cups green beans,
4 to 6 tiny new or 3 small red potatoes
Chicken stock, to cover (I substitute vegetable broth)
Salt and black pepper, to taste

Instructions

Cut up the bacon directly into a large saucepan and cook over medium high heat until it begins to brown. Add the onion and cook until softened, stirring occasionally.

Saute beans in the cooked bacon and onion for a bit first. Cut away a strip around the center of the new potatoes or if using small red potatoes, cut them into a medium dice; add to the beans. Pour over enough chicken broth to cover. Bring to a boil, reduce heat, cover, and let them low simmer for about 15 to 20 minutes, or until potatoes are tender.

Add salt and pepper as needed.

If using fresh green beans, remove the ends and snap in half or cut; rinse and set aside. Can also substitute 2 cans of cut green beans, reserving the liquid. If using canned beans, add the beans with their liquid, to the cooked bacon and onion. Add the potatoes and enough chicken broth to cover. Bring to a boil, reduce heat, cover, and let them low simmer for about 15 to 20 minutes, or until potatoes are tender.

My wife does the same thing in a HUGE pot! I don't get to take any in the truck because my two MONSTER SIZED boys and I devour it !

Your recipes look awesome but I'm wondering do you or anyone else have any healthy no fuss recipes for say a crockpot or burton oven? I'm on the road more than I am at home and would like to make smaller meals in said crockpot or burton oven - oh I also have a 700 watt microwave oven as well as a refrigerator. Thanks alot. Oh and I will be trying some of your recipes when I do get home - thanks and keep on cookin :)

One super easy thing I like to do with a crock pot is pulled pork. Get some pork and throw it in the pot, pour in a little liquid (I have experimented with Dr Pepper, Root Beer, and Coke), and then cook it forever. Basically until it falls apart when you poke it with a fork, so the longer the better. Then drain off the liquid, separate the pork into shreds, and add your favorite BBQ sauce.

Another meal I made recently was browning a pork steak on both sides in a little oil in an electric skillet on high heat. Then turn down heat to simmer, throw some quartered tators and green beans (I used beans fresh from the garden) directly on top of the meat. Add a cup of chicken broth, cover and simmer until vegetables are done and meat is tender. I bet you could even do that in a crock pot instead of electric skillet.
 
Found this recipe in Country Life, a free subscription magazine I get. Just a basic thing to do with tomatoes that I have seen suggested many times, but this picture looked so yummy that I just had to throw it out there for y'all in case you have never tried it. Very simple to make, just slice tomatoes and place in baking dish, over-lapping slightly. Top with finely chopped sweet bell peppers and onions (the recipe calls for slivers of almonds but I am substituting onions instead). Then, top with monterey jack, pepper jack, or mozzarella cheese. Bake in a 350 degree oven until cheese is nice and bubbly (about 15 minutes). Remove from pan with spatula and drain juice. I bet these could even be broiled or grilled.

I made the tomatoes for supper and they were good. I sprinkled them with Italian seasoning just before throwing in the oven. Kinda reminded me of pizza without the crust. My garden tomatoes were extremely juicy so there was a lot of liquid to drain off but being Brandywine tomatoes they had a very sweet flavor, which was nice. I think this would have been nice with portabella mushrooms, too, or even on veggie burgers instead of cold sliced maters, onions, and lettuce.
 
Duck's Honey Toast Recipe

1. Make toast
2. Put honey on it.
3. Eat.


Tip: if you don't feel like washing a butter knife, make two slices of toast, put honey on each one and rub the two pieces of toast together to spread the honey around. :thumbsup:


Locally produced honey will also help build an immunity to allergies, if you're a home-every-day person.
 
Don't need no stinkin' butter on toast if you're putting honey (or jelly) on it.

The only time I put butter on toast is when I'm using cinnamon-sugar mix, cuz without it, the cinnamon sugar will fall off.
 
Put peanut butter on one slice of bread, and honey on another. Put them together and enjoy.

Steve's Chili

2 Pounds hamburg
3/4 Pounds boneless chicken
1 1/2 Large onions
3 Cloves of garlic
1 Large can diced tomatoes
2 Small can diced tomatoes
1/2 Large can tomato puree
1/2 Small can tomato paste
3 Tablespoons hot chili powder
1/2 Tablespoon Worcestershire sauce
1 Tablespoons salt
1/2 Tablespoon pepper
1/2 Tablespoon sugar
1/2 Tablespoon Tabasco sauce
1/2 Tablespoon crushed red pepper
1/2 Small can Texas style chili beans with seasoning
1/4 Cup jalapeno peppers



Cut up onions and garlic and fry together in big
pot until hamburg is almost starting to burn and grease
is gone. Adds a lot more flavor to the hamburg. Broil chicken
with barbecue sauce about 10 minutes each side or until done.
Pour diced tomatoes and puree into pot. Cut up Jalapeno
into small chunks. Dump rest of ingredients into pot. Turn up
heat. When hot turn down heat and simmer for couple of hours.
