Perfect!!!!!!!! I love a medium steak. I usually order it medium well because not many cooks can do a medium or medium rare. I actually prefer a medium rare. But again not many cooks can achieve this.
The higher you go the less heat. The lower you go more heat. You want to cook a thin steak real quick or it looks like a grey piece of crap when cooked rare.

Butterflied venison steak the way I cut it, my mother puts the steak on the pan, puts the plate with the veges in front of us on the table, then places the meat on the plate in front of us... the time taken to take a few steps from the bench beside the stove where she dishes up the plates, to the table and back, is enough time to cook a 5mm thick piece of venison perfectly.
