I use John Boy & Billy grilling sauce to marinate with before cooking. Not bad.King's BBQ on Kensington St. on the "dark side" of Eustis, Fl.
Mustard based sauce, which you can buy in local grocery stores (if you're lucky) so you can make your own if you want.
Only open Fri, Sat. and Sun. from noon to about 2am.

You Westerners say Bar-B-Que, but, you mean cow. Real Bar-B-Que is in the East, and, it is pig, slow cooked over Hickory coals, seasoned with a vinegar/pepper baste (no sugar) using methods that trap the smoke in the cooking chamber. When it's served it is usually chopped and seasoned again with the vinegar/pepper mixture. A good host will have the same stuff on the table where it becomes known as the "dipping sauce." Sides include hush-puppies, slaw made with that same vinegar/pepper sauce, French fries, or, potato salad, and, a big glass of iced tea. If there is room afterward, an ample helping of peach cobbler, served warm, ala mode is a nice finish.
Cooking good Bar-B-Que is an art form, requiring a pick-up load of dry Hickory wood, 12 hours to kill, and, at least a case of beer, depending on how many helpers volunteer. The girls take care of the trimmings, the men smoke the meat.
No self respecting Southern boy doesn't have a smoker and a fire barrel close at hand.

No one can do barbecue the way I like it better than me, and once I get all the stuff I need at the store, I don't have to go any farther than the grill out on the porch!
