We started pressing a real thin patty of hamburger onto a flour tortilla meat side down and don’t flip it till it’s completely cooked then add a slice of cheese of your choice and then fold it in half.TaDaI do these at home quite a bit now, everyone prefers them, and so do I.
Not sure if I am explaining it right, but the burgers cook super fast, they maintain the awesomely greasy (or juicy if you prefer), while allowing for more of the grilled texture.
I don't go super flat on mine, but pretty flat, and always make them into double meat and double cheese. Lightly butter and grill the buns, and everyone ends up fat and happy after eating!
1/4 pound per patty for smaller, normal size buns. If you get larger buns, 1/3 pound patties fill them out great.
Pro tip: use some butcher or parchment paper between the spatula and the meat when smashing. Otherwise you tend to fight the hamburger meat wanting to lift off the griddle with the spatula.
