Let's settle this ketchup/ hotdog thing.

if anyone wants to rid the beans of the gas they produce, soak them over night in cold water. change that water and rinse out the beans maybe all of 3 times.

then when it comes time to cook them, use fresh water again. i did this with lentils and chick peas my last 2 soups and no gassy problems.

the soaking of the beans softens them and allows the chemical in them to escape.

Beans need to be soaked and rinsed regardless. In the first place beans aren't washed during processing because they would retain some moisture nd mold rapidly.

In the second place beans vary in density and won't cook evenly without soaking.
Soaking allows them to absorb water so that they all cook at the same time.

Otherwise some will turn to mush before others cook.

I soak mine overnight in salt water.

You really know your beans man. That’s impressive.
Why salt water?
What kind of salt to water ratio?

I think salt water helps clean them but I don't know that for a fact. Just a quick dump from the box, maybe several tablespoons.

Next time ask Sandy.

Pressure cooker can use dry beans and they'll be ready in an hour with 5psi pressure.

Bean and ham soup take about 50 minutes.

I forgot green beans are beans. :D

My grandma used to soak them too. She put a few beef bullion cubes in the water when she cooked them. I think she used a pressure cooker cuz it was one of the sounds we kids heard coming from the kitchen that means the adults were going to drag us to the dining room soon and make us sit still and be quiet.

I got a pressure canner for Christmas a few years back.

Wife really likes her bean and ham soup I make. I cure and smoke my own hams too.

I had to cook 18 quarts and 36 pints of soup. Wet bath would have taken too long.

I learned to pressure cook the soup and then can it.

You can do all that in a single day. Pantry is loaded for about 5 years then.
