Please list your particular method to check whether your brakes are adjusted properly.

I have a 99 Volvo 670 and all the sudden the brakes grab at the least touch of the pedal. The ABS is disconnected and has been for years so it's not that, I changed the foot valve so it's not that. I've never had one do this it will throw you to the dash, any ideas?
