THIS JUST IN....and I’m blown away

Except for the fact you are confusing the American version of Canadian Bacon with the actual Canadian bacon that is Pea-meal. If your Canadian bacon is not brine soaked and rolled in corn meal you are eating Fake Canadian bacon and it is probably ham.
Also correct me if I’m wrong but real Canadian bacon is made from side pork where as ham is usually a cured shoulder or rump.
 
I tried a recipe to make canadian bacon that used pork loin, basically you brine it and I smoked it whatever you want to call it it was damn good
